This riff on the classic Bolognese sauce is not only good for you, it's better for the environment!  Cauliflower and sofrito -- a carrot, celery, and onion mix that is the traditional base of Bolognese is simmered with tomato paste and soy sauce to build umami, and then braised with milk in the traditional bolognese stye into a soft and silky pasta sauce.
